Cornbread-Sausage Stuffing

Prepare as directed—except omit salt. Add ½ pound cooked crumbled bulk pork or chorizo sausage (see Sausage Stuffing below) and 1 cup chopped toasted pecans with the remaining stuffing ingredients.

Giblet Stuffing

Prepare as directed—except place giblets and neck—but not liver—from turkey or chicken in 2-quart saucepan. Add enough water to cover; season with salt and pepper. Simmer uncovered over low heat 1 to 2 hours or until tender; drain. Remove meat from neck and finely chop with giblets. Add with the remaining stuffing ingredients.
